Honey & Lavender Cookies

Ingredients

  • 100 g soft butter
  • 80 g brown sugar
  • 2 tbsp wildflower honey
  • 1 egg
  • 200 g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp dried edible lavender flowers
  • Zest of half a lemon

Instructions

  1. Cream butter and sugar until light and fluffy.
  2. Add honey and egg, mixing until smooth.
  3. Stir in flour, baking powder, lemon zest, and lavender.
  4. Shape small balls; flatten gently with the back of a spoon.
  5. Bake at 180°C (350°F) for 10–12 minutes, until golden at the edges.
  6. Let cool. Dust with powdered sugar and a few lavender petals if desired.
